Lion’s Mane Mushroom Cakes with Lemon-Dill Sauce

If you love a crisp-edged patty with a tender center, put lion’s mane mushroom cakes on your dinner list. This version uses shredded mushrooms, Dijon mustard and parsley, with a quick lemon-dill sauce for serving.

Mushroom cakes are an established preparation: Aubrey’s Kitchen publishes a lion’s mane crab-style cake recipe. The formulation below is a separate NoCap Mushrooms recipe, not a reproduction of hers.

Serves: 2; makes about 4 small cakes | Prep: 20 minutes plus 20 minutes chilling | Cook: 20–25 minutes total

Ingredients

  • 8 ounces fresh lion’s mane mushrooms, trimmed and shredded
  • 1 large egg
  • 1/3 cup panko breadcrumbs, plus up to 2 tablespoons if needed
  • 1 tablespoon mayonnaise
  • 1 teaspoon Dijon mustard
  • 2 tablespoons finely sliced scallions
  • 1 tablespoon chopped parsley
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • Black pepper to taste
  • 2 tablespoons neutral cooking oil

Lemon-dill sauce

  • 1/4 cup plain Greek yogurt
  • 1 teaspoon lemon juice
  • 1 teaspoon chopped fresh dill
  • Pinch of salt

Method

  1. Put shredded mushrooms in a skillet over medium heat. Cook for 8–12 minutes, stirring, until tender and their released moisture has evaporated. Cool completely before mixing with the egg.
  2. Stir together the egg, mayonnaise, Dijon, scallions, parsley, paprika, salt and pepper. Fold in the cooled mushrooms and panko.
  3. Rest for 5 minutes. The mixture should hold together when gently pressed. If too wet, add extra panko a tablespoon at a time.
  4. Form 4 patties about 1/2 inch thick. Refrigerate for 20 minutes to firm up.
  5. Heat oil in a skillet over medium heat. Cook the cakes for about 4–5 minutes per side, turning carefully, until golden and the egg-containing centers reach 160°F. Reduce the heat if the outside browns too quickly.
  6. Mix the sauce ingredients and serve with the warm cakes.

Serving idea

Pair with a green salad or roasted potatoes. These are mushroom cakes, not seafood, so label them clearly when serving guests.
